Cheap and Cheerful Carrot Soup

Whenever I'm feeling tired, a little blue or just downright lazy, this recipe is one of my go to faves!

I think this is one of the easiest things to make, and there are a 101 different recipes out there on the net for you to peruse, but here's mine:

Dice your onion and garlic and finely slice some celery. Soften in a little olive oil.


Then peel and chop your carrots.


Toss them into your pan. Season. And then top with about 400-500ml of stock.


Simmer away. Blitz so it becomes all creamy and delicious. Top with some coriander and serve as you like. I love it with garlic bread!


Super cheap, super easy, and super delicious. Its definitely a hat-trick!
