Cheeky Chilli

One of the most exciting things about being engaged is that now we can start thinking about all the places we want to travel to and explore! This week we were thinking about Mexico, and as I've been trying out some new healthy recipes recently to combat all the celebratory cake we've been eating, I thought a spicy Mexican Chilli might be a good place to start.

I made a Veggie Chilli pre our Monopoly night (got to love those classic games, and there's nothing like a little bit of healthy competition!), but I think this recipe would work really well with mince (meat for those of you carnivores out there or quorn) thrown in too.

To start off, on went the salsa tunes to get us really in the mood!

Then I made a really powerful paste full of flavour, by blitzing together: garlic, onions, 1 red chilli, smoked paprika, fennel seeds and coriander - stalks and all. This is what sets the scene for the whole dish.


Add the paste to a hot pan and toss in some roughly chopped peppers.


Then add chopped tomatoes and a combination of protein-packed black beans and chickpeas. (Here is where you could add in your choice of mince.)



Season with salt and pepper, and allow to boil away. The smell will get everyone down to the dinner table sharpish!


Whilst you're allowing your chilli to reduce and those flavours to really combine well, get your rice going!


Serve together, with a slice of lime and some nachos. I tossed a quick salad and guacomole together on the side, and you're good to go!


Dunk your nachos in and enjoy!
